What’s For Dinner? Salmon Veggie Burritos!
I sauteed a few salmon pieces in olive oil with fresh cilantro until cooked. Then I added shredded cabbage/carrot/broccoli, some leftover beans, salt & pepper, garlic and onions. And a small amount of that tangy whip of Miracle Whip Light…and rolled them in spinach tortilla shells.
Mixed Berry Cheesecake with Blueberry Shortbread Crust
I used the regular ol’ Philadelphia Cream Cheesecake Recipe. (Half fat free, half regular.) I added extra vanilla, cinnamon and a cup of mixed berries. (Berries I had soaking in sangria last week…hello!) Also, this was my first homemade cheesecake with my KITCHENAID MIXER. Pure bliss.
For the crust I didn’t have graham crackers so I got creative. I found a few packages of mini blueberry muffins and crumbled them up along with the two leftover shortbread biscuits in the fridge.
And tomorrow I shall our fresh berry/cherry sauce on top of thee and indulge. Mmmm.

Death to the EVIL cough!
My poor hubby has what I had a few weeks ago…never-ending violent coughing fits. I told him to steam the evil cough to death, so of course he gets all new-age like on me and asks to take a photo like a good blogger-spouse should do.
And Where Are We Going To Put These Cupboards?
In the barn of course. Silly me!
HWMMS was napping and the doorbell rang. Ding Dong! Our neighbor from across the street wanted to know if Chuck was around…so I woke him up.
Turns out said neighbor’s company is deconstructing apartment buildings out by Niagara University and they have TONS of cupboards like this load on the truck right here that they are just going to toss and burn, unless of course he is interested in them.
Surprise, surprise HWMMS is interested! And now we have cupboards in the barn.
BUT EVEN BETTER NEWS—because HWMMS knows all about the great work Buffalo Re-Use does for our community, he mentioned them to his neighbor. I contacted my dear friend Michele and got a phone number and passed it along. Because of Michele, seniors who need new cupboards will be able to get them for FREE. And we won’t end up with 27 more kitchen cupboards in our barn. (Fingers crossed.)
