Bacon Cheddar Beer Soup

The crusty delicious bread goes especially well with the Bacon Cheddar Beer Soup I made for dinner. I know I had a winner when I walked in the door at 5pm after running errands and HWMMS met me outside and said “Are you coming in? Soup and Bread. In My Belly. Now.”

Moments like this make me smile, I’m a good wifey. ;)

My recipe?

I cooked 6 pieces of bacon. (Truth: I cooked 12 and ate 6.) Set aside bacon, keeping grease in pan. I diced 4 onions/6 potatoes and tossed in bacon grease to cook. Added garlic (way too much—which is never enough, I love garlic!) and a 1/4 cup of butter. Cooked until soft. Added 4 cups of homemade chicken stock, about a cup and half of milk, 1/4 cup of flour. Salt and pepper. 2 cups of shredded pepper jack cheese and bacon. Oh and a handful of peas from the garden I had lying around. I let this boil down a bit and then added one bottle of beer. Threw in crockpot to cook for afternoon.

Mmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmm.

HWMMS loved it.
